I know I’ve mentioned my lack of meal prep abilities in previous articles. It really applies to more than just meals, but that’s a story for another day. The biggest part of my problem with meal prep is, I don’t know what to make. I’m not a horrible cook, I think I could make about anything as long as someone else could come up with a new recipe.
During the warmer months, meal prep is less of a problem. We grill our dinner as much as the Indiana weather allows, each all the fresh fruit and vegetables that we can get, and indulge in ice cream every night–really, isn’t that what summer is all about?
But as fall starts to creep around that I will soon be responsible for all the indoor cooking. And while my kids could survive on spaghetti every night; my husband and I would prefer a little more variety with our meals. And fall usually means busier, so I definitely need to get my meal planner game going.
Recently, I’ve discovered these amazing recipes for my instant pot and that really opened up some opportunities for new and different dinner options. The best part of the Instant Pot is the lack of planning it requires. And many of the instant pot recipes makes a quantity that we can eat for multiple nights. So it got me thinking–what if we froze some of those instant pot meals for later.
Pure genius! But, not mine.
The family of farmers is back with a list of meals that can easily be frozen and pulled out to reheat (and re-eat) later.
