It’s more than a chocolate candy store, it’s more than a chocolate factory. SoChatti is sort of like a modern-day Willy Wonka’s Chocolate Factory and until you go, you won’t understand.
What is SoChatti?
Founder, Matt Rubin and company are helping consumers discover the true flavor of chocolate. The flavor of chocolate without all of the additives, emulsifiers, and preservatives.
The gorgeously hip SoChatti store within Indianapolis’ Circle City Industrial Complex is just a jaunt away from all of the things to do on Mass Ave and the new Bottleworks development. It’s the perfect space for a chocolate tasting day date, mid-sized events, and learning about the chocolate-making process.
Matt Rubin’s wife loves chocolate and when she learned she had a dairy allergy, Matt made sure that she didn’t have to give up chocolate. From home, he made batch after batch of chocolate until he perfected it and SoChatti was born. While SoChatti may be a hit, Matt and his team aren’t done. They’re working hard to perfect the flavors and processes for creating other food and drinks.
SoChatti Chocolate at Home
SoChatti is best served melted, so you can taste the unique flavors of cacao from four different regions. Made with just three ingredients (cacao nibs, organic cane sugar, and organic cacao butter), you’ll taste only the natural flavor that comes from the environment in which the cacao is grown. SoChatti can be purchased to consume at home. Warm and serve the SoChatti chocolate packets before use or keep them warm all the time with the special countertop SoChatti chocolate warmer.
You can even make big plans for an at-home date night with the SoChatti Tasting Set.
The chocolate doesn’t have additives, emulsifiers, or preservatives. SoChatti is dairy-free, soy-free, gluten-free, nut-free, vegan, kosher pareve, and halal.
SoChatti Chocolate Tasting Room
Stop by the SoChatti Chocolate tasting room from Wednesday through Saturday and you can sample a flight of chocolate for $10. An expert chocolate associate will guide you through as you experience delicious locally-made chocolate. You’ll have a chance to see the cacao nibs, taste them, and learn about the chocolate made in Indy from cacao grown in Peru, Tanzania, Trinidad, and Honduras. Trust me when I tell you that they are each very different from one another but so very divine.
SoChatti has become a hot spot for Indianapolis date nights, ladies’ night out, bridal and baby showers, and other special occasions.
SoChatti Chocolate Factory Tour
Even if you’ve never thought about how chocolate is made, you must ask for a tour of this working factory to see the chocolate production. You’ll witness a handful of different parts of the process, depending on when you visit.
You’ll see the bags of cacao beans stacked high and labeled by the growers from the four different regions currently featured in SoChatti. You might see the team sorting the cacao nibs, preparing them for roasting. The smell of the cacao roasting is undeniably one of the best smells in the world. From there, it’s likely you’ll see the SoChatti grinder, working away at the cacao nibs and butter and sugar, creating the smooth, delicious chocolate. Or maybe you’ll be in the store just in time to watch the packaging of SoChatti.
Here’s where the Willy Wonka theme emerges most; in the flavor lab. There’s a glass panel that you can watch from the tasting room and see what’s happening in the laboratory. Team members are working hard on flavor preservation and refining the flavors found in existing food and beverage products. During my visit, I couldn’t help but draw upon childhood memories of lick-able wallpaper and the everlasting gobstopper from one of my very favorite stories. There’s no doubt in my mind that Matt Rubin and his team are on the cutting edge of flavor exploration.

Visiting SoChatti with Kids
Children are welcome to visit the tasting room with their adults. SoChatti has a whole slate of chocolate classes for kids and adults! Also, there’s a changing table in the restrooms! That’s a win!
