So you’ve been out strawberry picking at a u-pick farm or blueberry picking at your favorite local farm and now you’re wondering what to do with all of those berries. There are so many fabulous recipes, including our favorite, berry pies. If you’re looking for a very quick and easy breakfast or dessert, try sheet pan pancakes — they’re amazing! Any day now, those ripe, juicy berries could start popping up in a Farmers’ Market near you.
How to Make Sheet Pan Pancakes
Preheat your oven to 425.
Mix up your favorite pancake mix, let it sit for a few minutes while you cut up your washed berries and spray your sheet pan generously with a cooking spray.
Dump your pancake mix into the sheet pan and spread it out evenly if needed so it cooks better.
Drop cut up slices of berries or whole blueberries onto the top of the mix.
Cook in the oven for about 15 minutes. I used a 16 inch baking sheet and it took about 17 minutes in my oven.
Remove and while it’s cooling, spread butter over the top for that finished flavor.
I used 4 cups of Krustez Complete Pancake Mix, 4 eggs and 2 cups of milk. I wasn’t sure how it would work out since the recipes I found used a mix that wasn’t “complete” or made homemade pancakes. It was wonderful!
