Big Dill Grilled Cheese
The featured grilled cheese sandwich for 2026 is the Big Dill Grilled Cheese.
This one is for the pickle lovers. Havarti and cheddar cheese are paired with dill pickle slices and grilled on buttery sourdough bread. It’s gooey, tangy, crispy, and very on-trend for anyone who believes pickles belong on absolutely everything.
The Big Dill is $5, the same price as the Dairy Bar’s other grilled cheese sandwiches. Other choices include American on white bread, Colby on wheat, Pepper Jack on sourdough, and the returning Melty Mess with Havarti, cheddar, and Muenster on sourdough.
Blue Raspberry Milkshake
The 2026 featured Dairy Bar milkshake is Blue Raspberry.
This bright summer treat combines tangy raspberry flavor with a creamy milkshake and is one of the Dairy Bar’s official entries in the 2026 Taste of the Fair competition.
Milkshakes are $5 and are available in Blue Raspberry, chocolate, strawberry, and vanilla.
If hand-scooped ice cream sounds better, head to windows 8, 9, or 10. Ice cream cones and bowls are $6 and come in Birthday Cake, Butter Pecan, Chocolate, Moose Tracks, Strawberry, and Vanilla.
You’ll also find $5 Hoosier Custard, $6 mozzarella cheese sticks, $2 yogurt, and $2 cottage cheese on the 2026 Dairy Bar menu.
See the Indiana State Fair Cheese Sculpture
Don’t rush away after you’ve finished that grilled cheese.
The famous Indiana State Fair cheese sculpture is back for 2026. Artist Sarah Kaufmann, known as The Cheese Lady, works alongside food sculptor Nancy Baker to transform nearly 2,000 pounds of locally sourced Indiana cheese into a giant work of art.
Fairgoers can watch them sculpt on August 7, 8, 9, 11, and 12, with the finished cheese sculpture scheduled to be revealed at noon on August 12, 2026.
